Vegan Chocolate Cupcakes with Fudge Icing

 

Fudge Icing (Make ahead) 

 

Ingredients:

 
1 Cup Boiling Water

1 tsp coconut Oil

1/3 Cup Cacao Powder

1/2 Cup Dried, Pitted Dates

1 Cup Dairy Free Chocolate Chips

1 TB Maple Syrup

Dash of Salt

1/2 tsp Pure Vanilla Extract
 

Directions:

  • In a blender, place the boiling water, cacao powder , coconut oil and chocolate chips together and blend well on pulse setting
  • Add the dates and pulse until completely smooth
  • Add the maple, salt and vanilla and blend again until completely smooth
  • Place in the fridge for 3 hours or Freezer for 30 mins (depending on how long it is chilled, you may need it to set for a few minutes before it is spreadable)
  • Remove and ice cooled cupcakes. Icing will melt easily, so consume quickly or place in fridge for future enjoyment

 

Vegan Chocolate Cupcakes

 

Ingredients:

 
1/4 Cup Dairy-free Chocolate Chips (or 3 oz of DF chocolate)

1 TB Coconut Oil

1 Cup Unsweetened Vanilla Almond milk

1 tsp Apple Cider Vinegar

1 Cup Sprouted Spelt Flour (or Sprouted Rice Flour/Whole Wheat Pastry Flour/Gluten free flour mix) Note: If you use gluten free flour mix, read ingredients and omit the baking soda and baking powder from the recipe if it already has these premixed

1/3 Cup Cacao Powder

3/4 tsp Baking Soda

1/2 tsp Baking Powder

1/4 tsp Salt

1/2 Cup Coconut Sugar

1/4 Cup Unsweetened Applesauce

1 tsp Pure Vanilla Extract
 

Directions:

  • Preheat oven to 350 degrees
  • Melt the coconut oil and chocolate chips together in a saucepan (set aside)
  • In a small bowl, combine the almond milk and apple cider vinegar (set aside)
  • In a medium bowl, combine the flour, cacao, baking soda, baking powder and salt and stir well.
  • Add coconut sugar, applesauce and vanilla to the almond milk mixture and whisk together.
  • Add the wet ingredients (the chocolate and almond milk mixture) to the dry ingredients and mix until there are no lumps
  • Bake 12 muffin pans for 18-20 mins
  • Let cool completely before icing.
