Vanilla Coconut Chia Seed Pudding
Ingredients
- 1 Large Mason Jar
- 2 Cup Coconut Milk Can use unsweetened almond milk if preferred
- 10 TBs Chia Seeds
- 1/4 tsp Vanilla
- 1 tsp Stevia adjust to desired sweetness or omit Mix milk, vanilla extract and stevia in a mason jar.
Instructions

Mix milk, vanilla extract and stevia in a mason jar.

Add in 1 TB of chia seeds at a time and stir until all 10 TBs are in mixture.

You can put in the fridge immediately or let it sit for about 10 mins and then stir again before putting it in the fridge. This prevents clumping from occurring.

Place in fridge for an hour. (The longer it stays in the fridge, the thicker it will become)

Enjoy with berries, walnuts, pecans or by itself. Add more stevia to desired sweetness. You can also add maple syrup or honey starting with 1 tsp and adding more to desired sweetness.
