Two 20 Minute Baking Recipes to Make a Difference in Your Meals
I love simple ways to make meal prep easier! These two little baking helps have really helped with breakfast, lunch and snacks for me and my kiddos.
Bacon and Eggs are a great source of protein and help with cravings! I just made both of these recipes to help me finish off the rest of the week and wanted to share them with you.

1 package of uncurred Bacon (with 12+ slices)
2 – 9X13 glass pans
Unbleached parchment paper
- Preheat oven to 350 degrees
- Cut slices of bacon in 2 and place in 2 – 9X13 pans (Use unbleached parchment paper to make pan clean up simpler)
- Bake for 20 mins
I will bake a package of bacon the night before and use it for breakfast, tacos, sandwiches or make “kabobs” on a toothpick with bacon + fresh mozzarella + basil + Tomato. You can crumble bacon to top on pasta or salads.
Bacon makes everything better! Be sure to use uncurred bacon and if you can purchase sustainable pastured pork or grass fed beef bacon, your body will enjoy it most!
1 dozen pasture, organic eggs
1- 12 cup muffin pan
Glass bowl and ice + water
- Preheat the oven to 350 degrees
- Place each egg in its own muffin space
- Bake for 20 mins
- Remove from oven and place in a bowl of iced water
- Let ice melt
- Place eggs in a dish and store in fridge for use
I also bake these “boiled” eggs at night and use them for breakfast, salads, lunch protein and for snacks. You can use them for egg salad (along with the bacon! yum!) or chicken salad. I also place them in lunches with a half of avocado to eat together with salt and pepper. Peeling an egg can be so hard, check out this video to see the perfect way to peel and egg.
