The Best Chocolate Chip Cookies (Grain Free and Dairy Free)

Paleo is a big craze right now and I often have clients who want to follow that lifestyle of eating. We personally have had to use some of the Paleo recipes to cook for one of our stewart little’s who does better with certain ingredients eliminated.

I always like to keep things simple when it comes to meal planning for our family and so I find that often I am cooking “Paleo” for all of us.

When I began to be honest about our own sugar intake I looked to Paleo recipes to help me out.  We began to take gradual steps towards replacing sweet things in our family meal planning.

I tried to teach our kiddos that enjoyment of food did not have to be attached to sugar and showed them that by combining the right natural foods, we could actually make an enjoyable flavor even in the sweet category.

After much tweaking and trial and error, we have settled on this recipe for cookies! It is so easy and as tasty as grandma’s homemade cookies.

It was just too good to keep it for ourselves, so this is from our home to yours.  We hope you enjoy it!!

Dry Ingredients                                                                       Wet Ingredients

2 Cups Almond Flour                                                            4 TB Maple Syrup or Raw Honey

4 TB Coconut Flour                                                                2 Eggs

2/3 C Arrowroot Powder                                                      4 tsp Vanilla

1 tsp Baking Soda                                                                   1/2 C Almond Butter

1/2 tsp Real Salt                                                                     4 TB Coconut Oil

4 TB Coconut Palm Sugar

1/2 C Mini Dairy Free Chocolate Chips (or more!)

Preheat oven to 350 degrees.

Mix all of Dry ingredients together and set aside.  In as separate bowl, mix together wet ingredients.  Make a hole in the center of the dry ingredients and gently pour wet ingredients into that hole.  Mix all ingredients together until smooth or cookie dough consistency.

Prepare parchment paper or a cookie pan for baking. Take some additional coconut oil and place on palm of your hand. Scoop a small amount of cookie dough into your hand and form a cookie to desired size.  Continue this routine until pan is full. Bake for 6 mins.  Let cool for 5 minutes and enjoy!  (Makes about 40 bite sized cookies)

** Side note** One day I replaced the almond butter with sunbutter and the reaction with the butter and baking soda turned the cookies green! They still tasted delicious and everyone thought I was a genius for making green cookies without food coloring.
