
Soma’s Cauliflower Sandwich Thins
In september, Cauliflower is a great veggie to serve at your meals. I love sandwiches, tacos and pizza and wanted to sneak in more veggies on my plate. This is a great, low carb recipe to replace your grains and still get your delicious menu going for your week! Hope you enjoy it!

Soma's Cauliflower Sandwich Thins
Ingredients
- 1 Bag Cauliflower Rice I use the Trader Joe's bag (fresh, not frozen)
- 2 Eggs
- 1/2 Cup Parmesan Cheese
- 2 TB Nutritional Yeast Optional
- 3 Cloves Garlic Crushed
- 4-6 Leaves Fresh Basil Shredded
- 2 TB Olive Oil
- Varies Himalayan Salt
- Varies Black Pepper

Preheat the oven to 400 degrees

In a medium glass bowl, combine all ingredients together and mix well.

Place parchment paper on baking sheet.

Scoop out about 1/4 amount of mixture and form a circular shape for your sandwich thin. You can make the thins however small of large you choose it to be, but this recipe will make roughly 6 sandwich thins.

Bake at 400 degrees for 35-40 mins or until golden and slightly crispy as desired.
Recipe Notes
You can use this recipe to make one big crust for a pizza as well! Great toppings in the sandwich thins include: pepperoni, sweet potatoes, goat cheese, green veggies, herbs like cilantro, basil or mint, sprouts. Can be used like bread or a tortilla. To re-heat, place in a warm oven or heat on the stovetop. ENJOY!
