Soma Carrot Top Pesto


  • 2 Bunches Carrot Tops From farm or fresh from store
  • 1/4 Cup Parsley Leaves Fresh
  • 3-4 Leaves Basil Fresh
  • 4 Cloves Garlic Fresh (Can add more or less depending on desired taste)
  • 2/3 Cup Olive Oil
  • 1/2 Lemon
  • Varied Himalayan Salt
  • Varied Black Pepper
  • Varied Sunflower Seeds Optional


  1. Place greens (carrot tops, parsley and basil) in food processor. Drizzle olive oil over top and blend well. (You can omit the parsley and basil if too strong and replace with more carrot tops. )

  2. Add garlic cloves, 1 tsp of salt and 1/4 tsp black pepper and blend well. (You want to add salt according to taste, so add small amounts at a time.) 

  3. Squeeze 1/2 lemon on mixture and blend again. 

  4. Add sunflower seeds (if desired) and more season or garlic if desired. It is ready to eat with carrots, replaces a pizza sauce or replace a salad dressing. Enjoy!
