Fall Brussels and Sweet Potato Hash

 

INGREDIENTS

4 -5 Garlic Cloves (diced or 1 TB minced)

1/4 Purple onion diced thin

Olive Oil

6-10 Brussels

2-4 Small Sweet Potatoes (peeled)

Mineral Salt

Black Pepper

 

INSTRUCTIONS

  • Saute garlic and onions in 1/2 inch of olive oil in a pan
  • Dice brussels thinly and sweet potatoes
  • Add the brussels and sweet potatoes to the pan and salt generously
  • When frying at a high temp, reduce heat to low and cover
  • Cook about 5 more minutes or until the sweet potatoes are to desired texture (If you like it more crispy, remove lid after 5 minutes and let fry for another 5 minutes while string continually
  • Remove from heat and serve with black pepper and add a fried egg for extra protein. It is delicious for breakfast, lunch, dinner side or a snack!
  • Add sausage or ground beef for a fuller meal
