
Chocolate Almond Banana Oatmeal Breakfast Cookies
This has made for a quick breakfast in the school rushed mornings. It is gluten-free and dairy free. Enjoy with a London Fog Tea Latte!

Chocolate Almond Banana Oatmeal Breakfast Cookies
Ingredients
- 2 Ripe Bananas
- 1 Cup Almond Butter
- 1/3 Cup Raw Local Honey
- 1/2 tsp Vanilla
- 2 1/2 Cups GF Whole Rolled Oats
- 1/2 tsp Cinnamon
- 1/4 tsp Himalayan Salt
- 1/4-1/2 Cup Dairy Free Chocolate mini chips (We use Enjoy Life Brand)
- 1/2 Cup Pecans (Crushed)
- 1/2 Cup Almonds (Whole)
- 2-3 TB Flax Seeds
- 2-3 TB Sprouted Millet (Can also use Trader Joe's Seed mix or substitute chia seeds, hemp seeds or quinoa.)
Instructions

In a medium bowl, mix bananas, almond butter and honey until smooth.

Add vanilla, oats, cinnamon and salt and blend well.

Stir in chocolate chips, pecans, almonds and flax seeds.

On unbleached parchment paper, drop large spoon fuels of the batter and shape into circles.

Bake in preheated oven at 325 degrees for 15-20 mins
Recipe Notes
You can get creative with these cookies and add your favorite dried fruit, nuts and seeds. Also add pumpkin spice seasoning during the holidays!
