Broccoli Crunch Salad

My girls and I just got done uncovering the broccoli rows at a local farm this morning. Broccoli is a favorite winter veggie! Steamed, baked or raw it can be delicious! This broccoli salad has become my new favorite breakfast but can be enjoyed as a side or quick lunch! It is so easy to prepare in bulk for your work week! Hope you enjoy!


Broccoli Crunch Salad

Servings 4


  • 2 C Chopped Broccoli Florets Florets chopped in food processor
  • 1/2 C Red Onion Diced thin
  • 1/2 C Raw Sunflower Seeds
  • 1/2 C Almonds
  • 2 Cloves Garlic minced
  • 1/3 C Olive Oil or Avocado Oil
  • 2 TBs Apple Cider Vinegar Braggs Brand
  • varies Himalayan Salt
  • varies Black Pepper
  • 1/2 tsp Turmeric powder
  • Varies Uncured Bacon Optional
  • 1/2 C Feta Cheese Optional


  1. Place Broccoli florets in the food processor until it is finely chopped. Chop the onion and mince the garlic. 

  2. Place Broccoli florets, onion and minced garlic in a medium bowl. 

  3. Add sunflower seeds and almonds. 

  4. Drizzle olive oil and apple cider vinegar over top. Mix well.

  5. Add salt, pepper and turmeric and toss well. 

  6. Enjoy! 

Recipe Notes

This is great by itself as a meal any time of the day! It also works well as a side with soup, sandwiches or rice dish. Add Bacon, feta or fruit to create a fun flavor as well.
